Step 1: Clean and wash the fish first
Step 2: Combine 1.5 tbsp Kashmiri chili powder, 1 tbsp tamarind paste, 4 minced garlic pods, 1/2 tsp turmeric powder, and 1 tsp salt to make the fish marinade.
Step 3: To form a thick but smooth paste, add water, one spoon at a time. Apply the masala (marinade) to the fish pieces as needed. Ensure that the fish is completely covered in the marinade.
Step 4: Marinate the fish for at least 3 hours. If you're going to freeze the fish overnight, ensure it's thawed for at least an hour before frying it.
Step 5: On medium-high heat, heat an iron skillet. Using a pastry brush, evenly coat the skillet with 1/2 tsp oil.
Step 6: One by one, roll the fish pieces in semolina and set them in the heated skillet. Ensure the skillet isn't too full. 2 tsp oil is poured over the fish pieces.
Step 7: On one side, fry for around 8 minutes, and the fish will have scorched markings at this time.
Step 8: Flip the fish pieces over and drizzle 2 tsp of oil. 5 minutes of frying
